UHT Milk Machine, or ultra-high temperature, treatment uses high temperature to kill microorganisms in food or beverage products for a short time. It is widely used in the dairy industry where it is easy to lose nutritional value, flavor and appearance as microbes multiply. These creatures thrive at specific temperatures, but if they are not present in the product, they can be stored for several months without refrigeration. This state is called "commercial aseptic"

The UHT process is designed to achieve commercial sterility. They use heat-treated products to kill live microorganisms. This aseptic processing also requires equipment and packaging to be sterilized by chemical or other sterilization treatment.

There are many techniques available for ultra high temperature processing of products. A direct heating method, such as steam injection, mixes the heated steam with the product. An indirect heating method, such as a plate or tube heat exchanger, separates the product from the heating medium by means of a stainless steel separator.

The choice of direct or indirect heating and the system used depend on many factors, including product specifications, viscosity, and sensitivity to high temperatures. In addition to the quality of the raw materials used, the chosen system has a large impact on the properties of the final product.

The steam injection in the Milk Production Line is a direct heating system. Steam is injected into the product to be treated, and steam is injected to add the product to the steam. The steam must be of high quality cooking steam and does not contain any odor that would change the taste of the product.
